Mango Cupcakes
Ingredients
Flour: 100 GM
Desiccated coconut: 25 GM
Powdered sugar: 100 GM
Baking powder: 1/2 teaspoon
Baking soda: 1/4 teaspoon
Salt: to taste Curd: 75
GM Oil: 100
GM Mango pulp: 2 tablespoons
Vanilla: 1/2 teaspoon
Take curd in a bowl. Add oil and vanilla and mix. Now add powdered sugar and mix till well combined. In another bowl, take flour and add baking powder, baking soda and salt to it. Add the flour to the curd and oil mixture. Mix well. Add mango puree. Mix all till combined.
Fill the batter in 6 medium cupcake moulds. Take a pressure cooker or heavy metal deep pan. Cover the bottom with salt. Place a stand on the salt. Cover the pan with the lid. Turn on the gas at medium flame and heat the pan for 10 mins. Now remove the lid and keep the cupcake moulds in the pan. Cover with the lid and bake for about 20-25 minutes or till cupcakes are done.
